Artichoke is a great choice for your healthy snack, appetizer or meal! This unique vegetable adds variety, and incredible nutrients to your weight loss meals. Artichokes
are extremely low in calories, fat and cholesterol.

In addition to the very high fiber content in an artichoke, they are also a very good source of niacin, magnesium, phosphorus, potassium, and copper. Plus, vitamin C, vitamin K, folate and mangenese! Eating artichokes can help prevent kidney stones, relieve ulcers and acid reflux, reduce high cholesterol, promote healthy liver function, help digestion, and help prevent heart disease!

You can find this tasty vegetable in your grocery store or market year round. Be sure to choose the artichokes that are a dark green color, feel heavy, and the leaves are tight. Artichokes are also available in a can or jar.

Sauteed artichokes with lemon juice and garlic makes a great side dish with lean meat or seafood. Baked artichokes with onion, garlic, and bell peppers make a nice appetizer that your guests will love.

Toss a few chunks of your artichoke in your salad. For dinner, try a chicken and artichoke casserole! After baking your chicken, place in baking dish and top with artichokes, garlic, shiitake mushrooms, and a small amount of chicken broth. Bake until hot and bubbly!
