At only two calories for a half of a cup, and zero fat, you can enjoy eating as much arugula as you want! Arugula is a delicious, and healthy vegetable to include in your diet program. The beautiful deep green color looks wonderful on your snack tray, appetizer platter, or your dinner plate! Arugula can add delicate texture, variety, and excitement to your meals.
Arugula leaves have a hot and peppery flavor. The older the leaves are, the more intense the flavor becomes. Younger arugula leaves have a milder flavor, and are slightly more tender. As a suggestion, you may prefer using the smaller leaves for a salad, or eating raw; and using the older leaves for cooking.
These tasty leaves have many nutritional benefits. Arugula provides vitamin A, vitamin C, vitamin K, folate, calcium, iron, magnesium, phosphorus, potassium, manganese, thiamin, riboflavin, fiber and protein! Now that is a lot of extra nutrition to easily include in your diet!
Arugula is available in your grocery stores year round. Be sure to look for crisp, bright green leaves that are not wilted or wet looking. You can keep your leaves in the refrigerator for about 3-4 days.
Raw arugula makes a great addition to your salad. The nice spicy flavor will be jumping out at you! Or, you can enjoy just some arugula leaves with a small amount of olive oil drizzled on them. A few crushed walnuts tossed on top is a nice touch.
Try making a vegetable drink with some of your favorite raw vegetables, and add a few arugula leaves! This will definitely add some kick to your healthy drink!
Arugula is a great vegetable to add to your soups, and even your omelet! Try breaking a few leaves into small pieces and spread over a low calorie diet pizza! Just use a low calorie tortilla shell, chopped tomato, small amount of low fat mozzarella cheese, with as much arugula as you want!
For lunch, saute some arugula with a very small amount of olive oil, and garlic. Have as a side dish or even your main meal!
